Question by stealthy: Do I have a wheat allergy? What to make of this?
Im 32yrs old now and I think I have a wheat allergy that I never knew of. I started a diet called the Paleo diet which is elimination of grains, tubers, milk, and others. So I tried it, and really liked it and felt very good when I ate this way, I did it pretty much for 2 weeks strait. Then on every Sunday, I would go ahead and eat whatever I wanted, and I would get sick. So after about 3 weeks of getting sick, I pinpointed that when I eat wheat is when I get sick. So the symptoms are i get a little sweaty, I get headache, tracers, i’m out of it, fatigue, and lightheaded and super sensitive irritability to loud noises and banging. like maybe a migraine type symptoms? So is that a normal response to some kind of wheat allergy? Does it sound like wheat allergy or like insulin spikes or what?
its not in my head, I really do feel this way when I eat flour. The times that it has happened, was when I had whole wheat pancakes I made, and had symptoms. the other times were when I had cakes for birthday parties or desserts, pizza and bread. I normally just eat lean meat, eggs, lots of fruit, veggies, and nuts 95% of the time.

Well, I don’t think those are allergy symptoms. But then again, I’m not a medical professional so I can’t guarantee that.

As for insulin spikes… what are the wheat in? Pasta? Shredded Minis? As long as its not wheat in cereals, the glycemic load is actually pretty low so there shouldn’t be a huge insulin spike.

You might want to consider that its not just the wheat too. Could be the placebo effect… or perhaps the food that you have wheat in has gone bad? Lots of different factors that could be at play here. =/
