Is Paleo diet (caveman) the only legitimate diet for long-term wellness and health?

I’ve read that it is not just processed food, but grains, milk and legumes that are the cause of degenerative disease. An optimum diet for wellness, energy and a long disease free lifesapn is basically fish, meat, vegetables, fruits, oils and nuts as that’s what hunter gatherers ate and what our human bodies are evolved.

I’m confused as I’ve heard of a meditterenean diet, which is basically natural stuff (so potatoes, beans, cheeses are allowed), but the people of Spain, Italy, Greece etc are generally healthy, live long, not obese, and have good skin complexions.

Specific questions:
1. Are all carbs bad or just sugar?
2. Legumes/beans are bad?
3. Is dairy bad for the human body.
4. Is it true no humans ate grains before 10,000 years ago?
5. Is it true the human body is incapable of evolving to accomodate modern food?
6. Does it mean just because it’s FDA approved, it’s safe?
7. Are artificial preservatives or flavors like sucralose, potassium sorborate, msg, high fructose corn syrup, etc bad for the human body?

Basically my goal is not even weight reduction, just general wellness and to reduce the possibility of early degenerative disease. I do agree that it is not natural to be hooked on subscriptions by the time you’re 50, seems every American is on some sort of subscription.

Also sources are very confusing you keep reading contradictory things.
