Q&A: Where to find sushi-grade fish in Denver?

Question by Romeo_Svengali: Where to find sushi-grade fish in Denver?
So I’m a fairly extreme Paleo dieter – I eat only lean meat plus raw fruits and veg. I’d like to get more fish in my diet but I really don’t care for it cooked – I much prefer the taste of sushi.

So my question is, where in a city like Denver can I find fish that’s suitable to eat raw? Do I have to do to a special kind of store or can I just get it at the supermarket if it meets certain criteria? If the latter, what are those criteria?

Last but not least, what types of fish should I avoid because of mercury? I know this is covered in the Paleo literature but it’s slipped my mind.

Thanks so much for any help.

It really depends on the type of fish. Fresh yellowfin tuna steaks, for example, are best eaten raw/seared and raw in the center. The best place to find sushi grade fish is Whole Foods. My friend is a fishmonger at Whole Foods here in Austin, TX and says that they cannot sell it as “sushi grade” to prevent lawsuits but is sushi grade and its best to ask your fishmonger when the fish was FLOWN IN.

Supermarket chains is NOT a place to buy sushi grade fish as it is not flown in daily and is mostly frozen. Look for clean facilities, EVERYTHING on ice, all flesh should be bright and show no signs of oxidation (browning tuna for example–tuna should be a deep rich red color), clear eyes on whole fish etc.

I actually make my on SASHIMI at home and only buy my fish from this seller online. It is not cheap, but it is parasite free and shipped over night.

Whenever you buy from a public seller you run the risk of contracting a parasite because you don’t know what goes on behind the scenes.

Enjoy your sushi!!!
