This Classic Reserve cheddar from The Grafton Village Cheese Company (founded in 1892!) gives a sophisticated old-world life to this traditional Vermont cheese. Made of raw milk and aged at least 2 years, it develops a complexity and sharpness that young cheddars can only dream of. The concentrated flavor is contrasted by the butterfat of the milk, and avoid being too bitingly sharp like some aged cheddars can be.
