While I can’t speak for everyone, I think the taste has a lot to do with it. I live in Italy and the mozzarella here is fresh and unpasteurized. I’ve tried both and I agree that the cheese does taste better, but unfortunately it is only good for one day, then it has to be thrown away. You can get mozzarella in the States, but it is pasteurized and not the same.
